Gluten-Free Muffin in a Mug

What does this have to do with marketing? Nothing, but it’s Sunday! So relax.

Actually, good health has a place in marketing and certainly in coaching. Everything you do comes from who you are and where you’re at.

Plus, this is the coolest recipe ever! You make it in a mug and microwave it for a minute. And a real muffin comes out! Really!

Thanks to my church pastor and a fellow parishioner for sharing it last week in their Healthy Breakfast class. I’ve been eating these all week!

Muffin in a Mug

¼ cup flaxseed meal

1 teas. cinnamon

½ teas. baking powder

2 packets stevia

1 egg

About 1 teaspoon butter or butter substitute (you can also try 1 teas. cooking oil)

Optional: raisins, nuts, blueberries.

Put dry ingredients into a microwave-safe mug and stir. Add egg and butter and blend. Stir in any optional ingredients desired.

Microwave on high for one minute and 10 seconds. Adjust time as needed as every microwave oven is different. But that’s what worked for Rev. Tom and it turned out to be just right at my house too.

Remove from microwave, overturn it into a plate and voila, you have a muffin!

Note: I made this without raisins and it wasn’t sweet enough. I still liked it. Since then I’ve used raisins, and sometimes substituted organic sugar for stevia. I like it better with the raisins. Apparently, adding more stevia can make things bitter, so if you add more sweetener, it’s probably better to use sugar. That is purely my observation.

Also, I find I need to microwave the butter in the mug before I add the other ingredients. Otherwise, it’s too cold to mix in.



P.S. Try it with the kids, but not so sure about the teens. My son says it tastes – and looks – like cat food. Don’t listen to him, it’s awesome. 😉
